Anytime muffins

So the other day, a recipe for English muffins popped up into my facebook feed. It was very exciting indeed! Why?! It’s always exciting to have another “bread” option for us low carb peeps to eat, especially one that we know is going to be teeming with good fats and loads of fibre.

So I watched the video and made it. Here it is for those of you who are interested…

…and it was great but I felt like there was something missing.

So I went to my personal favourites to add more fibre, make it more bread-like and less cake-like… and boy oh boy did it work!

It’s pretty common for us to love bread, after all we were mostly raised eating it for breakfast, lunch and dinner – at least I was. Toast was my weekend breakfast (I usually ate cereal during the week), my after school snack and it would be used for sandwiches during the day or to mop up sauce from your bowl when eating something delicious like home made spaghetti bolognese! (now I do zoodles).

But those days are gone now…and although I don’t really miss them (my tastes have changed a lot), I do value all the ingredients that double as spreads (or are spreads) like butter, avocado (or home-made guacamole) with tomatoes, vegemite (I’m an Aussie, you can have your marmite if you want – ew!), eggs, bacon and home-made mayo, peanut butter or any other nut butter, nutella (the non-toxic stuff of course), cream cheese (if you eat dairy) and jam. Oh I remember my auntie giving me jam and cream on toast as a kid – no joke, I loved it…

…but now I can still do all of this, on these delicious muffins!!

AND… they take all of 5 minutes to make. Like, not.even.joking! They have become a super-favourite of mine and they are so filling, especially with your favourite toppings.
